Fuel: Strawberry & Coconut Protein Muffins

Science in Sport Ambassador Christie Johnson, also known as “The FitNut Kitchen” has come up with some great tasting recipes fulled by science.

RECIPE:

MAKES 12 | 7.9g protein per muffin

Ingredients:

1 1/2 cups wholemeal self-raising flour

1/3 cup raw sugar

6 scoops / 1 cup SiS strawberry whey protein powder

1/2 cup shredded coconut

2 eggs lightly beaten

1/3 cup oil (either canola, vegetable, extra-virgin olive oil)

Optional: 1/4 cup white chocolate chips, 1/2 cup fresh diced strawberries or raspberries

Method:

Pre-heat oven to 160°C .

Sift flour and SiS protein into a large bowl.

Add coconut and sugar. Stir well.

Make a well in the centre and add eggs, milk and oil.

Mix until just combined, making sure you do not over mix!

Gently fold in optionals if desired.

Spoon mixture into muffin tins and bake for 20-25 minutes until inserted skewer is clean and muffins begin to golden.

Optional: After 15 minutes place a strawberry slice on top of muffins and continue to bake.
